SUSHI can be difficult to pair with wine… however I have found an excellent Chardonnay that makes the paring perfect! In Patagonia Argentina, Bodega Del Rio Elorza makes Verum Chardonnay in raw concrete pools. No oak, and no stainless steel. 100% fermented and aged in raw concrete!
When their winemaker Agustín Lombroni (vineyard photo) introduced me to this unique Chardonnay, I was captivated. The more I tasted his Chardonnay the more I craved sushi… I just knew it would be the perfect pairing. So I brought a couple bottles home with me from Argentina, and headed to a fancy sushi bar.
OK, so the sushi (check out the photos) was quite extravagant. So was the Verum Chardonnay. It was the perfect pairing. Just look at the bright fresh yellow color in the photo of this wine. It has very nice acidity, and the nose is floral fruity white peaches. The magic in your moth is its citrus flavors that beg for sushi. If a white peach could be a citrus and a grapefruit could be a stone fruit, now you have the magic!
